Hey there! This week has been Mexican week at our house. Mexican week must always have homemade salsa, always! As with most recipes that Sydney and I make, we have tweeked this one a little bit to make our taste buds really happy!
Let me start by saying this makes a good bit of salsa. You can always cut the recipe in half if that works better for you. You can also add more of this and less of that. This recipe is great for experimenting. At the end of this post I put some suggestions for changing it up.
Ingredients:
4 cans diced tomatoes with Jalapenos
2 cans diced tomatoes
1 large onion
2 bunches cilantro
1 tablespoon sea salt
Start by pouring 2 cans tomatoes with Jalapenos and 1 can tomatoes into a blender. Add one bunch of cilantro (not the stems) and place on top of the tomatoes in the blender.
Next, dice up half of the large onion and place on top of the cilantro in the blender.
So beautiful! Love the vibrant colors!
Now, blend to your desired consistency. We don’t like ours real chunky, so we blend until it is more on the smooth side. Pour into a large bowl or container.
You will need to repeat the above steps for the remaining cans of tomatoes, the second half of the onion, and the other bunch of cilantro. It won’t all fit into our blender at the same time. If you have a large, commercial blender you might be able to blend it all at once.
Once you have blended the second batch and poured it in with the first batch, you will need to add 1 tablespoon of sea salt and stir it in.
That is it! You are finished! We recommend making this at least 12 hours ahead of serving and put in the refrigerator. We usually make it about 24 hours ahead and refrigerate. We think this gives a good amount of time for the flavors to infuse. We love this recipe!
This is one of those great recipes that you can tailor to your taste. Maybe you want to add in some garlic or ground pepper. Maybe you want less onion or more cilantro. Maybe you like yours extra hot and want to chop a few jalapenos in it. Just experiment with it until you come up with the perfect blend for you family.
