Cinnamon Roll Muffins are perfect on a cold day. The cinnamon sugar gives a warm and cozy feel and the cream cheese icing dripping down the sides sweeten each muffin to perfection. Such a moist muffin recipe that can be made as jumbo muffins, normal size, or minis.
Muffins are a huge hit at our house and everyone has different favorites. They are especially popular for breakfast on the weekends. I prefer my muffins with a cup of black coffee while my husband prefers his with a glass of cold milk.
I think when you eat a muffin for breakfast you feel like you are doing something forbidden. They are super sweet and fun. They are almost like eating a cupcake for breakfast, especially when they have a drizzle of glaze or icing! Oh my!
Cinnamon Roll Muffins
Sydney spearheads our cinnamon recipes. So when she came across this recipe for these Cinnamon Roll Muffins from Some The Wiser, she just had to tweak it a little for her taste buds and give it a try. Thanks so much for the inspiration for this recipe Some The Wiser!
You could easily add raisins, cinnamon chips, or nuts to this recipe if you like a little chewiness or extra crunch in your muffins. For this particular recipe we left all the extra goodies out. We wanted the focus to be on the crunchy topping and the delicious cream cheese icing. By the way, this icing is pure heaven! We are always fans of a great cream cheese icing!
The cream cheese for the icing needs to be softened, so just set it out an hour or two before starting this recipe.
For this recipe, we used a jumbo muffin pan. This type of pan only makes six muffins. All of the baking time is adapted to this type of muffin pan. If you are using a normal muffin pan (one that makes twelve muffins), you will need to bake them less.
To get bakery style muffins we always bake our muffins at 400 degrees F for the first five minutes and then we turn the oven down to 375 degrees F for the remainder of the baking time.
Icing or No Icing?
If you are not a fan of icing, you can leave the tops plain. If you are like us you may have some icing lovers and some who would prefer them plain. Make them half and half like we did! If you are only going to drizzle icing on half of the muffins you can cut the icing ingredients in half.
This Cinnamon Roll Muffin recipe is going to be a staple around our house for years to come. We all fell in love with these delicious muffins!
