Cut the chicken breasts in half so they are not thick. Set aside.
Heat some olive oil in a skillet on medium high heat. Use enough olive oil to cover the bottom of an oven safe skillet completely.
In a medium size bowl whisk together the Argo® Corn Starch, flour, and Italian seasoning.
Place the chicken breasts, one at a time, into the mixture, Coat completely. Place the coated chicken breasts in the hot oil. Cook for about 20 minutes or until the juices from the chicken breast are clear.
Add some spaghetti sauce and mozzarella cheese to the top of each cooked chicken breast. Place the oven safe skillet in a preheated 350 degree oven for 5 minutes or until the cheese has melted.
Serve with a side of spaghetti and marinara sauce. If desired, add some freshly chopped parsley. Enjoy!
