This butterscotch haystacks recipe is from a neighbor that used to make these when I (Stephanie) was a little girl. Way back when in the good old days! All of us kids in the neighborhood looked forward to when she made them. It is one of those foods that bring back childhood memories when you eat it! 🙂 For some reason childhood memories for me usually revolve around either food or holidays. Not sure why. Maybe it has something to do with certain foods being eaten at certain times of the year. Whatever the reason, this butterscotch haystacks recipe brings back some great memories of time spent with the neighborhood kids!
Crunchy, sweet goodness! They are not the most elegant looking little things, but what they lack in beauty they more than make up for in taste! Not all food has to be gorgeous to taste absolutely delicious. This is one of those such foods.
The great thing is you can make these in no time and it only takes 3 ingredients. How much simpler could it be? Well, I guess my neighbor could still make them for me and that would be easier! 🙂

If butterscotch isn’t your thing you could use chocolate chips or peanut butter chips. White chocolate chips with red and green sugar crystals would be really fun at Christmas! You could add in M&M’s or nuts. The sky is the limit with the creativity and versatility of this recipe. This is also a really fun recipe for little ones to help with.
