Baked Oatmeal Cups are great for adults and kids. Even though this breakfast is healthy, it is also very delicious. These are very easy to make ahead and pop in the freezer, as well!
This morning we wanted something a little more substantial than a banana for breakfast. But we also did not want something super sugary like french toast either (even though we have the Best French Toast Recipe ever!).
Baked Oatmeal Cups offer a very filling aspect, along with a super yummy taste. The warm notes of cinnamon, the subtle taste of apples, and the hearty oats in each bite create a wonderful breakfast!
Change Up The Flavors
If these are a bit too plain for you, toppings can easily be added in! Lots of kiddos want a pop of color before they dive into their breakfast. When you compare Baked Oatmeal Cups to colored-icing-covered Pop Tarts, fun-shaped cereal, and blueberry pancakes, they fall a bit on the bland looking side.
However, we have a solution for this problem! Take a handful of your favorite topping and sprinkle them on top of each muffin before they go into the oven. You can use raspberries, chocolate chips, diced apples, blueberries, etc. Just take a butter knife and swirl the toppings into the batter and you just packed your Baked Oatmeal Cups full of extra flavor!
If you have a family who can’t agree on which toppings they like, do different rows of their favorite toppings. Another crisis averted!
Sizes of Baked Oatmeal Cups
Feel free to change up the size of your Baked Oatmeal Cups. We made them in the normal size muffin pans. However, you can make them in mini muffin pans or jumbo muffin pans. Just account for that when you are setting the timer once they are in the oven.
If you like crispier oatmeal cup, we’d highly recommend the mini muffins. If you like a very moist and soft oatmeal cup, we’d recommend the jumbo muffins. Play around with it and let us know which one you like best.
Healthy Ingredient Choices
One of the many perks about this recipe is all of the great ingredients! Unsweetened applesauce is a much better choice than sweetened applesauce or canola oil. It accounts for some of our sweetness and liquid in this Baked Oatmeal Cups recipe.
Unsweetened almond milk is another great choice. It is always a great idea to bake with this when sending goodies to school with your little ones. More than likely someone in their class has a dairy sensitivity.
Did you happen to notice what was missing from this recipe? The sugar! The honey (along with the unsweetened applesauce) do all of the sweetening for us without having to add in several cups of those white granulated crystals. We use raw honey, but you can easily put in regular honey if that’s what you have on hand.
