Applesauce Muffins
A wonderful muffin for the fall season. This has all the popular fall flavors: cinnamon, apples, and nutmeg.

Ingredients
Crumb Topping
  • 3/4cup salted buttermelted
  • 3/4cup light brown sugar
  • 1 cup all purpose flour
  • 2teaspoons cinnamonWe used Vietnamese Cinnamon
Muffins
  • 1 1/2cups all purpose flour
  • 1teaspoon baking soda
  • 1teaspoon baking powder
  • 1/2teaspoon salt
  • 2teaspoons cinnamonWe used Vietnamese Cinnamon
  • 1teaspoon nutmeg
  • 1/2cup canola oil
  • 1cup sweetened applesauce
  • 1cup light brown sugar
  • 2extra large eggs
Instructions
Crumb Topping
  1. Preheat oven to 400 degrees F. Line a muffin tin with paper liners.
  2. Make the crumb topping first. In a small bowl, combine the melted butter, brown sugar, flour, and cinnamon. Mix together using a fork. Work it until it is small crumbles and wet. The smaller the crumbles the better they will rest on the top of the muffins. Set the crumb topping aside.
Muffins
  1. Make the muffins second. Using another small bowl combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  2. Use a large bowl to whisk the oil, applesauce, and brown sugar. Whisk in the eggs. Next, add to the dry ingredients. Fold them in until just combined.
  3. Fill each paper muffin liner almost to the top. Top each muffin with the crumb topping.
  4. Bake the muffins at 400 degrees F for 5 minutes. After 5 minutes, turn the oven temperature down to 375 degrees F for 13 to 15 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  5. Remove the muffins from the tin immediately and place them on a cooling rack for a few minutes before serving.
