Batter
  1. Preheat oven to 350 degrees
  2. Spray with cooking spray and line with aluminum foil (also sprayed with cooking spray) a 9×5 inch loaf pan.
  3. Combine cinnamon and brown sugar in a small bowl. Set aside.
  4. In a medium size bowl beat together the butter and granulated sugar until smooth and creamy.
  5. Beat in eggs, one at a time, until all are blended in. Add vanilla extract.
  6. Whisk baking powder and flour together in another bowl. Add these to the creamed butter mixture. Beat until blended.
  7. Mix milk into batter until creamy.
  8. Pour half the batter into the prepared loaf pan; add half the peeled and grated apples and half the cinnamon & brown sugar mixture.
  9. Lightly pat apple mixture into batter.
  10. Pour the remaining batter on the top of the apple layer and top with remaining peeled and grated apples and cinnamon & brown sugar mixture.
  11. Lightly pat apple mixture into batter; swirl brown sugar mixture through the apples using a knife.
  12. Bake for 45-55 minutes or until a toothpick inserted in the middle comes out clean.
Glaze
  1. Mix whole milk and powdered sugar together until well combined.
  2. Once the bread has cooled for at least 15 minutes, drizzle with glaze.
