Summer is here big time, right along with the heat! It is so nice when you have a recipe that requires no cooking or baking. No need to get the kitchen all heated up with this amazing recipe! Even better, this lemon pie recipe stays in the refrigerator until you are ready to serve it! Perfect for these hot summer days we have been having lately.
This No-Bake Lemon Pie recipe is so refreshing. It is the perfect cool and light dessert. You get a wonderful blend of sweet and tart. It is also super easy to make. Seriously, this dessert is perfect!
30 vanilla-cream sandwich cookies (we used Golden Oreos)
6 TBSP butter, melted
2 cups of cold milk
2 packages of instant lemon pudding mix (3.4 oz or 3.5 oz each)
2 TBSP lemon juice (from 1 large lemon)
1 container frozen whipped topping (8 oz), thawed
lemon slices (optional)
fresh berries (optional)
lemon zest (optional)
Crush the cookies into fine crumbs using a food processor. You can also place the cookies into a large resealable bag and crush them with a rolling pin. Grease a pie plate with butter or spray with cooking spray (we tried skipping this step…let’s just say it was a disaster). Melt the 6 TBSP of butter and combine with the crushed cookies. Press evenly into a 9-inch pie plate. Set aside.
For the pie filling, whisk together the milk, lemon juice and both pudding mixes. Whisk for about 2 minutes, until the pudding is thick.
Now we are going to start layering. This is the fun part! For the first layer, spoon 3/4 of the pudding evenly over the cookie crust. For the second layer, add 1/2 the container of whipped topping to the remaining 1/4 of pudding. Gently fold these together and spread over the first layer. For the third layer, spread the remaining whipped topping evenly to the edges of the pie crust.
Look at this! It is so pretty!
Cover the pie and refrigerate for a minimum of 4 hours to overnight. Before serving garnish with lemon slices, lemon zest and fresh berries, if desired. If there is any pie leftover, place back in the refrigerator. I am thinking there may not be any leftovers! 🙂
This lemon pie recipe was a huge hit with our family! We will definitely be making this recipe over and over. It is so quick and easy! For our garnish we bought 2 extra lemons. One for slicing and one for zesting! If you don’t want to mess with the garnishes, that is perfectly fine. The peaks of cool whip on the top of the pie are very pretty all by themselves!
