We have a favorite coffee cake recipe that we love and want to share with you! It is so good! One of my favorite things about this particular coffee cake recipe is the amount of streusel topping. There is a really nice, thick layer of streusel topping. Obviously, you can never have too much streusel! 🙂
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
Cinnamon to taste (optional)
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1/2 cup butter
3/4 cup milk
1/2 teaspoons vanilla extract
Streusel Topping:
1/2 stick butter
1/4 cup flour
2/3 cup brown sugar
1 teaspoon cinnamon
Directions:
Preheat oven to 350 degrees F. Grease and flour a pan (9×13 inch).
To make the cake combine flour, baking powder, cinnamon, salt and sugar in a large bowl. Cut in the butter until the cake mixture resembles coarse crumbs. In a measuring cup crack egg and then add milk until the two ingredients equal 1 cup. Stir the vanilla into the egg and milk mixture. Pour this into the crumb mixture and mix until just moistened (do not over mix). Spread into the prepared pan.
Bake for 15 minutes. While the batter is baking you can make the streusel topping.
To make the streusel topping cut the butter into pieces, set aside. Combine the flour, brown sugar and cinnamon. Add the butter pieces to the dry ingredients. Use the pasty blender to combine into coarse crumbs (or use your hands and crumble together).
When the cake has baked for 15 minutes, pull it out of the oven and top with the streusel topping. Put back in the oven and finish baking until a toothpick inserted in the middle of the cake comes out clean. Allow to cool.
We have found from tweaking this recipe a few times, that by allowing the cake to bake for about 15 minutes, the streusel topping doesn’t sink down into the cake.
Total baking time is 30 to 40 minutes, depending on individual ovens.
