Many of you, who have been following us for quite a while now, have read about my lack of love for soggy food. Something about soggy food makes my stomach churn. I have disliked soggy food for as long as I can remember. I have never been able to eat strawberry shortcake or pineapple upside down cake because of how wet it is! I have always struggled a bit with chicken parmesan also, because the breading would get soggy. The spaghetti sauce and mozzarella cheese would seep into the coating after a bit and ruin the meal for me. For us foodies, meals are extra important!
Our Secret Weapon…Argo® Corn Starch!
I am so excited today to share with you a new use for an old favorite that we have found in Argo® Corn Starch. This specific ingredient will give you the crispiest chicken! I am also excited because it stands up to spaghetti sauce and mozzarella cheese and does not get weighed down. It remains crispy and airy! My chicken parmesan is no longer a ruined meal! Yay! Check out this amazing chicken parmesan below (before we put the spaghetti sauce and mozzarella cheese on it). It is the crispiest chicken we have ever made!

Family Dinner Time
The importance of meals, as well as “non-ruined meals”, stemmed from my childhood. Both my family and my husband’s family always sat down together for family dinners. When we were first married, we continued this tradition of the family dinner at the dinner table…with no TV on. To this day, after almost 34 years of marriage and two grown children, we still sit down together with no TV on and no cell phones. Just us and delicious home cooked meals.
I believe these family meals are what led to Sydney and my passion for cooking and baking. It has also led us to continually strive to create the next recipe or improve upon an old one. We most definitely have improved upon our chicken parmesan recipe with our new found use of Argo® Corn Starch. We have always used Argo® Corn Starch for thickening our sauces, as a binding agent in baking, and when we make Asian dishes, but we never included it in our batter mix.

When we find something this great, it is like Christmas morning for us! Most recipes have a secret ingredient and Argo® Corn Starch is our new one in this chicken parmesan recipe. You will want it to be yours also! You can get the crispiest chicken with Argo® Corn Starch. Corn starch is often used as a thickening agent for sauces and soups and is commonly used in Asian cooking for stir-fries. However, when used in your batter to fry chicken, it will leave you with an audibly crunchy and beautifully browned exterior while sealing in the juices of the chicken. Argo® Corn Starch makes your fried chicken better! Just add corn starch to your batter to get the perfect crispy coating.


Chicken Parmesan
Ingredients
- 2 pounds chicken breast cut in half (so they are not thick)
- 1/2 cup Argo Corn Starch
- 1/2 cup all purpose flour
- 2 teaspoons Italian seasoning
- olive oil for bottom of skillet
- 1 small jar spaghetti sauce
- 1 cup mozzarella cheese more or less to taste
- fresh parsley, chopped optional
Instructions
- Cut the chicken breasts in half so they are not thick. Set aside.
- Heat some olive oil in a skillet on medium high heat. Use enough olive oil to cover the bottom of an oven safe skillet completely.
- In a medium size bowl whisk together the Argo® Corn Starch, flour, and Italian seasoning.
- Place the chicken breasts, one at a time, into the mixture, Coat completely. Place the coated chicken breasts in the hot oil. Cook for about 20 minutes or until the juices from the chicken breast are clear.
- Add some spaghetti sauce and mozzarella cheese to the top of each cooked chicken breast. Place the oven safe skillet in a preheated 350 degree oven for 5 minutes or until the cheese has melted.
- Serve with a side of spaghetti and marinara sauce. If desired, add some freshly chopped parsley. Enjoy!

I have been showing you pictures of how crispy this chicken is because this has been a life changer for me due to my distaste for soggy foods. Now I will show you the completed dish with the yummy sauce and gooey cheese on the top. What is not to love? Look how amazing this is! The most important part for me is that it remained crispy throughout the entire meal! Thanks to Argo® Corn Starch, chicken parmesan is back on the menu at our house.
