If you like sugar cookies then you will love this recipe! The sugar cookies have a really great flavor and a great chewy texture. It would be fun at Christmas to use red and green sugar crystals. Or at Halloween use orange ones.
While we are on the subject of sugar crystals, I want to say that Sydney and I definitely favor the larger sugar crystals. They have a little bit more of a crunch and a little more flavor (if sugar actually has a flavor??). Our personal favorites are the Wilton White Sparkling Sugar Sprinkles. They say sprinkles on the container but they are much more of a crystal. 🙂 Do these not look yummy?
2 3/4 cups all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 cups white sugar
1 cup butter softened
1 1/2 tsp vanilla extract
1/2 cup sugar crystals for rolling (you can use regular white sugar for rolling also)
Preheat oven to 350 degrees. Place parchment paper on cookie sheets or baking stones.
Sift together in a small bowl: the flour, baking powder, baking soda and salt. Set this aside for a few minutes.
Beat together with a mixer the sugar and butter until it is smooth and very fluffy. Next, beat in the egg and vanilla extract. The last step is to gradually blend in the dry ingredients that were set aside earlier.
Roll dough into balls (heaping tablespoon amounts) and then roll balls in the sugar crystals. Place on the parchment lined cookie sheets or baking stones about 1 1/2 inches apart.
Bake 14 – 16 minutes or until just very lightly browned. Leave on the cookie sheets or baking stones for several minutes before removing onto cooling racks to allow the cookies to set.
