This recipe is so amazing. The cookies are pretty and all crinkly on the top as well as tasting really good!
8 oz of chopped dark chocolate (do NOT use Baker’s Chocolate)
3 Tbsp butter
1/2 cup light brown sugar (lightly packed)
2 large eggs
1/4 cup all-purpose flour
1/4 tsp baking soda
optional: powdered sugar (topping)
Preheat oven to 350 F.
Melt together the chocolate and butter (stove top or microwave). Cool to room temperature, about 15 minutes.
In a small bowl whisk the sugar and eggs. Add to the chocolate and mix well. Add flour and baking soda, stirring well.
Place the cookie dough in the fridge for about 20 to 30 minutes, just until batter has thickened slightly.
Line cookie sheets with parchment paper (this keeps the cookies from sticking). Do not skip this step…we tried one time and it was a disaster! 😉
Use a medium cookie scoop to scoop better on the cookie sheet. Place 6 cookies per cookie sheet.
Bake for approximately 10-13 minutes (depending on the preference – chewy or more crispy).
Optional: Sprinkle powdered sugar on top once cookies are completely cool.
